It is derived from a similar recipe for a Brazilian stew that used to be served at the World Food\u00a0Caf\u00e9\u00a0in London\u2019s Covent Garden. Sadly the\u00a0Caf\u00e9 is gone, but <a href=\"http:\/\/www.amazon.co.uk\/World-Food-Caf%C3%A9-Chris-Caldicott\/dp\/0711217513\">the cookbook<\/a> remains and over time\u00a0I made that recipe my own.<\/p>\n<p>This is a very simple dish to make, it can be made as a vegetarian recipe &#8211; or not &#8211; and can be customised to fit your taste! It\u2019s ready in 30 min or so and can easily be reheated too\u2026<\/p>\n<p><strong>Sweet Potatoes, Butternut and Beans\u00a0<\/strong><\/p>\n<p>For 2-3 as a main course<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul><\/p>\n<li>Half a butternut, peeled and cubed<\/li>\n<p><\/p>\n<li>2 sweet potatoes, peeled and cubed<\/li>\n<p><\/p>\n<li>2 or 3 cans of beans \u2013 choose the ones you like best, this one is made with butter beans and pinto beans but anything goes!<\/li>\n<p><\/p>\n<li>2 red peppers, cut into pieces<\/li>\n<p><\/p>\n<li>3 cloves of garlic, finely chopped<\/li>\n<p><\/p>\n<li>Vegetable or chicken stock<\/li>\n<p><\/p>\n<li>Feta or a similar tangy cheese<\/li>\n<p><\/p>\n<li>Olive oil<\/li>\n<p><\/p>\n<li>Cumin \u2013 1 tablespoon<\/li>\n<p><\/p>\n<li>Smoked paprika \u2013 1 tablespoon<\/li>\n<p><\/p>\n<li>Oregano (fresh or dry) &#8211; a handful fresh or 2 small teaspoons<\/li>\n<p><\/p>\n<li>Optional:\n<ul><\/p>\n<li>Chorizo or another type of spicy sausage<\/li>\n<p><\/p>\n<li>Pancetta, diced<\/li>\n<p><\/p>\n<li>Fresh or flaked dry chilli peppers (1 chilli chopped or less, to taste)<\/li>\n<p><\/p>\n<li>Avocado, sliced<\/li>\n<p>\n<\/ul>\n<p>\n<\/li>\n<p>\n<\/ul>\n<p>\n<strong>Recipe<\/strong><\/p>\n<ul><\/p>\n<li>Saut\u00e9 the garlic in olive oil<\/li>\n<p><\/p>\n<li>When it starts to become a little transparent, add the cubed sweet potato and butternut<\/li>\n<p><\/p>\n<li>If using cooking chorizo, pancetta, or chilli, add now<\/li>\n<p><\/p>\n<li>Add the spices<\/li>\n<p><\/p>\n<li>Saut\u00e9 for another 5-10 min<\/li>\n<p><\/p>\n<li>Add the vegetable or chicken stock until the vegetables are just covered.<\/li>\n<p><\/p>\n<li>Put the lid on let it simmer 15 min<\/li>\n<p><\/p>\n<li>Add the drained and rinsed beans<\/li>\n<p><\/p>\n<li>Add the cubed peppers<\/li>\n<p><\/p>\n<li>Let it simmer until the sweet potato and butternut are cooked through<\/li>\n<p><\/p>\n<li>Add salt and pepper to taste<\/li>\n<p><\/p>\n<li>Serve with feta crumbled on top and optionally, a slices of avocado<\/li>\n<p>\n<\/ul>\n<p>\nYou can serve with a side of rice also.<\/p>","protected":false},"excerpt":{"rendered":"<p>This recipe is one of my favourites because it\u2019s just so easy and quick to make and those bright colours are lovely for a winter meal.
